If I could describe the taste of these waffles it would be, "like summer in your mouth". Not the best description because you're probably thinking, how am I supposed to taste summer? But the explosion of sweet with citrus is almost indescribable. Let's put it this way, they're amazing!
Breakfast is easily my favorite meal of the day. Normally I'm a savory person but lately I've been really craving sweet. Maybe it's because Kevin and I are still eating our leftover wedding cake every night and now I've gotten used to the taste of sweet goodness or maybe it's because I'm simply craving cake over and over. Either way, this recipe is like dessert!
I'm adding a recipe section to my blog because I find myself spending more and more time in the kitchen, cooking my favorite recipes and creating personal touches to my Mom's meals she used to make for me as a kid. Not every recipe will be a sweet banger like this one, Kevin and I love our healthy eats- lunch and dinner is often for that but late night cravings or early morning sweet tooth hankerings still have their place in this household. It's called balance ya'll.
For the waffles:
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons poppy seeds
2 cup buttermilk
4 teaspoons butter, half melted
3 tablespoons honey
2 teaspoons vanilla
1 tablespoon lemon zest
4 tablespoons lemon juice
For the Honey Lemon Whipped Cream:
4 ounces cream cheese
2 tablespoons powered sugar
1 tablespoon lemon juice
2 teaspoons lemon zest
2 tablespoons honey
1/2 cup whipping cream
- Preheat your waffle iron
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
- In medium bowl whisk together eggs, butter, honey, buttermilk, vanilla, lemon juice, and lemon zest.
- Slowly mix medium bowl into large bowl. Do not over mix.
- Cook on waffle iron. Add whipping cream and strawberries on top!
